Another Culinary Delight

I would be lying if I told you that I am a culinary genius.

Actually, I’d be lying if I told you I was a genius of any kind.

Because of that, it might surprise some of my IRL friends that I am posting a recipe on my blog.

While it is obvious from all appearances that I have a love for all things sweet, it is a well-known fact that I am not known for my mad skillz in the kitchen. In fact, things tend to go way wrong when I’m in the kitchen. For that reason, when I find something that works, and I mean really works, especially in the kitchen, I feel the need to share it. And, for something to really work for me in the kitchen it must meet the following criteria.

  • fast
  • easy
  • fail proof

What can I say? I’m a simple girl.

The “Poke Cake” is one of my favorite desserts.

  • Prepare a regular cake and bake it according to the directions in a 9X13 pan  (a white cake works best)
  • Just before the cake is done baking, dissolve one 3 oz. package of jello in a cup of boiling water.
  • Stir in just 1/2 cup of cold water
  • Poke the cake with a fork every inch or so and then carefully pour the jello all over the cake. (Pour slowly to allow the jello some time to seep into holes)
  • Chill for three hours.
  • Cover generously with whipped topping and chill for another hour.
  • Top with your favorite fruit.

  • Then, try like heck to keep from eating it all.

And that, my friends is how you make a poke cake.

Easy or not – that is one good cake. Don’t ask me how I know. Because I certainly would never make something so easy and pass it off as a dessert one could entertain with…

My Grandma always used to make Poke Cakes for holidays. It’s been years since I had one. Maybe I need to make one sometime!
